RECIPE—Fried Sweet Potato Lunch


You guys have got to try this! It’s awesome, I just made it up today, so tasty.

Fried Sweet Potato Lunch (serves 2)

1 Large sweet potato, cubed
1 med. onion, sliced
4 cloves garlic, minced
1 sprig rosemary, diced
4 Eggs (2 per person, or just one if you like)
Scallions, diced (as many as you like)
Parmesan Cheese (the brick that you shred yourself, not that fake stuff in a green can)
Salt and Pepper to taste.

So here’s what I did. I par-boiled the sweet potatoes for a few minutes, just to soften them up. I drained them and added them to a hot skillet with some oil and the onions. Try not to stir too much, but wilt down the onions. Add the rosemary and garlic and maybe a little butter (I did). Add the scallion greens last, they just need to be heated through.

I seasoned the potatoes to taste, then just fried 2 eggs over easy and plopped them on top! Shred just a small amount (or more if you like) of Parmesan cheese over the top! It was a fantastic meal, super filling and very satisfying. If all vegetarian food tasted like this, I could be vegetarian for a week or so. Coming from me, that’s saying a lot!

Also, everything except the sweet potatoes,eggs and garlic came from my garden, so it was super fresh. Food just tastes better when it was just picked.
